Chicken and Mango Salad

Serves 6

  • 1 large barbequed chicken
    2 mangoes, peeled and sliced
    1 Lebanese cucumber, sliced
    1 small red onion, finely sliced
    100g Asian style lettuce leaves
    dressing:
    ΒΌ cup fresh lime juice
    1 tablespoon Bundaberg rich brown sugar
    1 tablespoon peanut oil (or vegetable oil)
    1 teaspoon sesame oil
    1 tablespoon fish sauce
    1 teaspoon finely grated fresh ginger
    1 small red chilli, seeded and finely sliced

1. Remove chicken meat from bones and cut into serving sized pieces. Place in a large bowl. Add mangoes, cucumber, onion and lettuce leaves and gently toss to combine.
2. Combine all dressing ingredients in a jar and shake to mix well. Pour over salad and gently toss.
