Raspberry Friands

1 cup almond meal
2 teaspoons finely grated lemon zest
1½ cups Bundaberg Pure Icing Sugar
1/3 cup plain flour
5 egg whites
150g butter, melted
100g raspberries, fresh or frozen
extra pure icing sugar, to serve
- Preheat oven to 180oC. Grease friands.
- Place almond meal, lemon zest, sifted icing sugar, flour and egg whites into a bowl. Mix until smooth. Add butter and mix until combined. Spoon batter into prepared pan (fill to about ¾). Sprinkle with raspberries and gently press into batter. Bake 20-25 minutes or until golden and firm.
- Allow to cool 10 minutes in pan before turning onto a wire rack to cool completely. Dust with icing sugar, to serve.
